This
morning, I had the opportunity to be a guest on the Haligonia.ca morning web
show Halifix. I’d seen several of their webisodes before, but today, I got to
be on their side of the camera.
Wow, it happens so fast. Maybe it just seemed
like that to me because the hosts Heidi Petracek and Ashley King are so
seasoned in front of a camera.
They
were great to have me in to their studio to give me the chance to speak with
their audience about Halifax Restaurant Deals and the TASTE, DINE and COOK like
a CHEF Sweepstakes. They did a quick piece on the show with me, and then did a
full interview after. The video for today's Haligonia Halifix is below:
During
the show today, they launched the Haligonia.ca iPhone App.I had a chance to download it from the iTunes
App store (it’s free!) right before the show.It’s a great addition to any iPhone’s users
device to keep current with what’s going on in our city, and includes tabs that
pull in Haligonia news headlines, photos, their twitter feed, and the latest
videos like my interview. It looks great, has some pretty cool features, and
I’m sure there are more to come.
Today
was a totally unique experience for me. I’m more of a behind the scenes guy.
That’s why I love working in a kitchen. But I have to admit that once my nerves
had settled and I got a little more comfortable being in front of the camera, I
had a pretty good time. Heidi and Ashley truly helped me through the interview
with their lightheartedness. Thanks again to everyone at Haligonia.ca. I hope
to be able to stop by again!
For me
personally, with oysters, I could take em’ or leave em’. However, Halifax is
full of oyster lovers, and any restaurant that I've worked at in the city that
has had oysters on the menu has sold more than a few orders every night.
Many cooks find
them to be a nuisance, having to deal with a raw product that can be quite
messy to handle. But after shucking countless oysters over the years,
I have a method. Every oyster is different, unique and ready to be cracked
open… you just have to find the sweet spot.
That's why I’m
very excited to be entering the CATCH Nova Scotia Seafood Festival Oyster Shucking Challenge. It looks like there are some strict rules
to adhere by… but that’s just to make sure our beautiful East Coast oysters
are showcased properly. The winner of this contest will get to represent the province in at the national oyster shucking contest in August held during the Tyne Valley Oyster Festival.
I'm going to
try to get in a few practice shucks before the competition takes place on
June 20th at the Cunard Centre. I’m a little rusty, and
oyster shucking (and sometimes the shuckers themselves) can be quite dangerous. Hence the rule about disqualification for "physical interference during the shucking competition." But I have tough hands, they're ready to shuck, and I'd love to visit PEI in August...
I like new things. More accurately, I like
being a part of new things. It invigorates me. Since I've been
working in the restaurant business, I've been involved in opening three restaurants
and started my own catering business, Relax Dinner Parties. I love the excitement, energy, and enthusiasm that goes into a new project or venture.
Over the last few weeks, I've gotten
involved in a startup project with my brother and a business partner of his.

What I bring to the table for this new
venture is my industry knowledge and restaurant contacts. After working in this industry for over eight years,
I have met many amazing people from the back of the house to the front, as well as many managers and owner/operators of Halifax area restaurants of all shapes and sizes. But what I've realized in the
last few weeks while working on Halifax Restaurant Deals is that it's just the tip of the
iceberg!

I started working at the Wooden Monkey about a year ago. While I was working at Bear Restaurant, I had mornings off and a friend of mine from NSCC, Chef Rhonda Starkey, now at the Sea Rover Inn, needed some help with her prep crew at the Monkey. I was very excited to be working in two of Halifax’s best restaurants. It marked the start of a very busy summer for me.
Back when I was in cooking school, I joined the Jr. Chefs Association. One of our meetings was held at the Wooden Monkey and hosted by Lil MacPherson, co-owner and creator of the WM. She was full of information, had great food philosophy, and very passionate about being environmentally conscious. I knew then that some day I would spend some time working at the Monkey.
In early October, 2009, I started working full-time at the Wooden Monkey and moved up from prepping to cooking on the line. After some kitchen management changes, I was given the position of Chef de partie. Essentially, my job was to run lunch and dinner service. After a few busy months, one of the sous chefs left to go on maternity leave and the other one came back from finishing her red seal certification.
It was great being exposed to the extensive range of local products that the WM uses. I can confidently say that I know where to find the best of the best that Nova Scotia has to offer. I also got the chance to cook for guests with a wide variety of allergies and intolerances, as well as vegan and vegetarians.It was a completely different realm of cooking for me. Having that exposure will always affect the way I think about and prepare food for any of my guests in the future.
After a year at the Wooden Monkey, and with the end of my apprenticeship nearing, it felt like the right time to step back from my position. I will soon be back working with Chef Ray Bear to finish my training at his new restaurant (opening soon!). And as always, I’m trying to grow my catering business Relax Dinner Parties, and have recently started doing gigs with my first mentor, Chef David Whalen.
I’m also working on a new project that will allow me to connect with all the great Halifax area restaurants which I’m sure will keep all of my free time unfree... J That’s the nature of this business, and it’s a reality that everyone in this industry must come to terms with… you need to be cooking with all your burners…and make sure nothing burns!!!
