Happy Easter to everyone! I have two days off of work for the holiday. That's rare in the restaurant business... So I'll take it for everything that it's worth. With that being said... I already know what kind of a day I will in for on Tuesday when we re-open the Wooden Monkey for lunch. The key to Tuesday will be being 100% organized. Even though the restaurant is closed... It doesn't stop breathing. Prep lists and freezer pulls were done late Saturday night to ensure a smooth start on Tuesday.
On top of starting from scratch and preping everything for the menu by 1130 when we open for lunch... Michelle, the Chef at the Monkey, and I will be learning about Macro and Micro-biotics from the owners of Big Life Bakery. The restaurant uses their pitas, pizza crusts (gluten free and regular) and some spelt grain products. I can't wait to hear what they have to teach, and I will pass what I learn on to you!
